Peru is the second largest exporter of organic cacao and in Peru alone, there are more than 60 different varieties of cacao, out of the world’s 100 total varieties. The White Cacao is Peru’s most recognized bean due to its high quality and rich flavour which has been recognized by some of the world’s best chocolatiers such as Pierrick Chouard, Jean Paul Hevin, Philippe Bernachon and Stéphane Bonnat.
